Originally modeled after French super-stinker, Epoisses, this washed rind pasteurized sheep registers more closely to the Portuguese “torta” style. Both styles are famed for frequently invoking expressions of surprise with unexpected and wild flavors alongside rich, palate-coating beauty. Green Dirt Farm’s Bossa, is exactly what we love about European, funky flavorbombs- a cured-meaty washed rind encasing velvety paste with a tart-cherry tanginess.
Wheels weigh 7-8 oz.
Natural grey/blue molds may grow on the rind of Bossa.
Our favorite application: Another favorite savory dessert alongside some Amantillado sherry and dried fruit!
Tastes like: Sheep’s milk yogurt, tart cherries, cured ham.
