Homestead Creamery Flory's Truckle
This raw cow’s milk cheese from Homestead Creamery takes heavy inspiration from classic English clothbound cheddars. The Flory Family makes the near twenty-pound cylindrical wheels (called truckles) from milk from their herd at Homestead Creamery and then rubs the clothbound wheels in lard before they go to the cave. Aged over 12 months, these mammoth wheels take on incredible depth, sweetness and texture. Like Capriole Goat Cheese’s Julianna, this is an absolute crowd favorite and the cloth binding (inedible! Just peel it off before eating!) adds to the aesthetic of a cheeseboard.
Our favorite application: Go full English with a Ploughman’s lunch! Just add City Ham, some sort of pickle, and some good bread!
Tastes like: Hard butterscotch candies, rosemary, beef broth.
