Boxcarr Handmade Cheese Rocket's Robiola
An ash-ripened, Robiola style, pasteurized cow’s milk from Cedar Grove, NC. Cheesemaker Sam Genke at Boxcarr Handmade Cheese gives these pudgy little squares a dusting of vegetable ash after the make which allows a more mild and minerally rind to develop. This was actually the first cheese we brought in back in 2016, and boy have we eaten a lot of this ever-enticing, addictive little pudger since then.
Rocket’s Robiola are typically 15-16oz squares
Our favorite application: Pre-dinner snack alongside Anchovie Stuffed Olives and a VERY dry martini with a twist. Trust us.
Tastes like: Full fat yogurt, oyster shell minerality, inviting earthiness.
