The legendary spruce bark wrapped raw cow’s milk from Dodgeville, WI is back! Uplands Cheese and cheesemaker Andy Hatch have been a major force in establishing the United States as a producer of some of the best cheese in the world. Focusing on just two cheeses, Rush Creek Reserve is made after the cows have switched from pasture to hay feeding, making for fattier, more nutrient rich milk. This is what every cheese fiend in the country is after around the holidays!
Wheels are approximately 12 oz.
Our favorite application: In our opinion, there is only one way to do Rush Creek, which is to give it 2 hours to come to room temp before unwrapping, taking a paring knife to just above the half of the spruce bark, and folding back half of the top to reveal the liquid gold below. From there, go at it with warm baguette, spoons or fingers (you animals!).
Tastes like: Mushroom custard, holiday ham, beef bone broth.
