Holy cannoli! This is hands down the best fresh ricotta we’ve ever had! This one pound custardy cube of creamy decadence is made by the expertly-trained folks at Caputo Brothers Creamery by cooking the whey from the rest of their cheese line! The whey (the liquid byproduct of cheesemaking) from this high quality pasteurized cow’s (and 10% water buffalo!) milk from small family, Animal Welfare Approved farms is heated to further extract the remaining little baby curds that slipped through the cracks. This extra bit of heat results in a cooked-milk sweetness that makes this an all-hours ricotta whether you’re making ricotta pancakes, an open-faced sandwich, baked ziti, or cannoli!

Our favorite application: We absolutely love this and Fior di Pizza in Melissa Clark’s pasta bake, but we also recently threw it into the food processor with just a spoonful of powdered sugar and stuffed that velvety ricotta into pizzelle for quick, easy cannoli.
