A Robiola style, pasteurized cow’s milk from Cedar Grove, NC. Rosie’s is the first cheese we ever tasted from Boxcarr Handmade Cheese and it’s still probably the cheese we eat the most of at home! Named after head cheesemaker Sam’s daughter- Rosie’s is the non-vegetable ashed version of Rocket’s Robiola, swapping out minerality for more sourdough-y funk along with a bunch of buttery mushroominess.
Rosie’s Robiola are typically 13-16 oz squares.
Our favorite application: Go pro aperitivo hour and pair it with some velvety Coppa and a negroni!
Tastes like: Buttery chanterelles, sourdough funk, full fat yogurt
