We love the tyrosine crystals that form in super aged gouda or old school cheddars, so when we saw that Ben at Potomac Chocolate up in Virginia was using TOASTED SOURDOUGH BREADCRUMBS to get that magical crunch throughout his beautifully balanced dark chocolate, we just had to have it. Obviously it pairs fantastically with the cheeses mentioned above, but it’s a real showstopper with blue cheeses.
