A mini bloomy rind pasteurized cow + goat’s milk from Cedar Grove, NC. After five years of sourcing all of their milk from neighboring dairies Boxcarr Handmade Cheese has a goat herd of their own! Combining a neighboring dairy’s cow’s milk with their farmstead goat’s milk, Sam Genke and her team are making the best Italian-style bloomy rinds on this side of the Atlantic. In true Italian cheesemaking fashion, the ratio of cow to goat’s milk varies based on availability over the season. Cow’s milk provides buttery decadence while the goat’s milk provides nutty, grassy depth- a match made in cheese heaven!
Cottonseed mini wheels are typically 4-5 oz each
Our favorite application: Similar to it’s all-cow, sister-cheese Cottonbell, we imagine we’re in the Piedmont with crusty bread and some funky Italian bubbly- Prosecco or Pet Nat, please!
