Tempesta Mortadella with Sicilian Pistachio
Our long awaited 2022 trip to Sicily, like most vacations, took a few unexpected turns- a lengthy tow truck ride that verged towards abduction, running down Etna’s volcanic ash to escape a hail storm, and a shocking amount of mortadella consumption. All of this mortadella prompted us to go in search of something a little different than our beloved Smoking Goose Mortadella. Obviously Sicilian pistachios needed to be involved, but the main desire was to find something with finer emulsion and therefore a smoother, more velvety texture. Where Smoking Goose goes for a more rustic texture with massive flavor, Tempesta goes classically, silky smooth with mellower flavor. The result is an ability to be sliced insanely thin, which means you can eat a whole lot of it.
