As you may know, “-ella” or “-ello” on the end of all sorts of Italian things usually means ‘a smaller version’. So actually, Eric’s last name, Casella (casa + ella) translates to ‘little house’, and in Italy, post office boxes are referred to as ‘casella postale’! Anyway… this little aged pork sirloin (essentially a smaller version of prosciutto) is earthy, fruity, super-special, and quite limited stuff… hence the hefty price tag… But hey, we all know what we’re doing here- enjoying life and small-scale specialty fermented foods!
