Yes, there are typos on this website but we DO know how to spell prosciutto, thank you very much. So what is “cosciutto”, you ask? Well we had to ask too, and it turns out that it’s something of a La Salumina original! This cured pork leg rubbed in coriander and black pepper is essentially the bresaola (typically made from beef, like Smoking Goose’s) but from a pig! This lean, clean and fruity cousin to Coppa is a perfect pairing alongside a semi-firm hunk of cheese!
