Sequatchie Cove Creamery refers to their area of Tennessee as the Savoie of the South, so it is only fitting that they’ve modeled a cheese after the iconic, vegetable ash-bellied Morbier. This technique was traditionally used to protect the morning milking’s curd from unwanted pests until they could complete the wheels with the evening milking’s curd! While Coppinger wheels may be a bit smaller than the wheels it takes inspiration from, let’s just say sometimes a sequel is better than the original.
Our favorite application: Like most Alpine-styles, Coppinger is sort of asking to be broiled atop some good bread. The addition of Roasted Hazelnuts wouldn’t hurt either!
Tastes like: Jammy egg, cured ham, sweet cream.
